Nestled in the scenic landscapes near Hereford and Gloucester, this exquisite Mansion Hotel invites a talented Sous Chef to join their kitchen brigade.
Featuring 300 elegantly designed bedrooms and a dual dining experience- the relaxed Market Kitchen and the more formal Brasserie-this property is renowned for its character and quality.
Role Overview
As Sous Chef, you'll play a pivotal role in the kitchen, acting as second-in-command and stepping up in the Head Chef's absence.
You'll bring creativity, innovation, and a passion for excellence, ensuring the highest standards for every dish.
This role demands leadership, adaptability, and a drive to maintain high standards even under pressure.
Key Responsibilities Support Leadership : Assist the Head Chef in managing the kitchen team and operations.
Culinary Excellence : Craft high-quality dishes using seasonal, locally sourced ingredients.
Quality Control : Ensure consistency in taste and presentation across all menus.
Team Development : Mentor and support the team, fostering growth and motivation.
Operational Management : Help with menu costing, stock control, and wastage reduction.
Supplier Collaboration : Work with local suppliers to secure the best produce.
Health & Safety : Uphold food hygiene and safety standards.
Essential Requirements Experience : At least 1 year as a Sous Chef in a high-end dining environment (gastro pubs, restaurants, or similar).
Culinary Skills : Proficient in creating innovative, seasonal dishes with a focus on fresh, local ingredients.
Operational Expertise : Familiarity with menu costing, stock management, and wastage control.
Health & Safety Knowledge : Certification and understanding of food hygiene and safety regulations.
Leadership Ability : Comfortable managing workloads and high-pressure, high-volume service.
Attention to Detail : Ensures every dish meets visual and taste standards.
