Key Responsibilities Food Preparation & Presentation: Prepare meals according to the IDDSI framework, ensuring textures and consistencies align with prescribed levels (e.g., pureed, minced, soft, or liquid diets).
Ensure meals are visually appealing and flavorful, despite modified textures.
Menu Planning: Collaborate with dietitians, nutritionists, and healthcare professionals to design IDDSI-compliant menus tailored to residents' or patients' dietary needs.
Adjust recipes to meet individual allergies, intolerances, and preferences.
Compliance & Safety: Follow food safety standards, including proper storage, preparation, and handling of ingredients.
Adhere to all IDDSI guidelines and ensure compliance with local health department regulations.
Team Collaboration: Train kitchen staff on IDDSI guidelines, food preparation techniques, and safe swallowing practices.
Work closely with caregivers and healthcare providers to understand residents' specific needs.
Quality Assurance: Conduct taste tests and consistency checks to maintain high-quality meals.
Monitor feedback from residents, patients, and staff to improve offerings.
Inventory Management: Manage inventory to ensure the availability of ingredients required for IDDSI-compliant dishes.
Maintain accurate records of food production and ingredient usage.
Innovation: Develop creative solutions to enhance the appeal of modified diets, including innovative plating techniques and ingredient substitutions.
Skills & Knowledge: In-depth knowledge of the IDDSI framework and dysphagia-related dietary needs.
Understanding of food safety regulations (e.g., HACCP).
Strong culinary skills with a focus on modified textures and dietary restrictions.
Excellent organizational and communication skills.
